Start thin
A fine merino or a thermal base layer adds real warmth without any visible bulk. It is the layer that does the most work.
Finish with structure
Your outer layer should be the loosest and the most structured. A long wool coat with a defined shoulder will sit cleanly over a knit, while a shapeless puffer will add width everywhere.
